Lambrusco Wine Jelly (Gelatina di Lambrusco)The Rinaldi family has been producing traditional balsamic vinegar of Modena for several generations. The family owns a prestigious "acetaia" (i.e. the place where the vinegar is aged) complete with XVI and XVII century barrels, which are still used today. The true secret of a good balsamic vinegar lies in the aging process, which must never be rushed. The deliciousness of the final product depends on that unique aroma which only comes with a masterful aging process. In 1990 the Rinaldis were awarded the "best of the best" prize for traditional balsamic vinegar, a coveted award only given once every twenty years. The passion and patience acquired by the Casa Rinaldi family over several generations working in the production of balsamic vinegar, has established the foundation needed to expand their product line while maintaining their high standards for excellence. One of their more recent expansions is a line they named Vizi & Virtu (Vices & Virtues). One of the Vizi & Virtu products is Gelatina di Lambrusco, or Lambrusco Wine Jelly. Lambrusco Wine Jelly is ideal served with soft and fresh (high-fat) cheeses, goat's milk cheeses and cream and strawberry desserts. Each jar of Lambrusco Jelly by Casa Rinaldi contains 220g or 7.75oz.
